These are not your cake-like, mostly-bread muffins like you get from Costco. This is a dense, craggy, chunky muffin where you can see everything that went into it when you take a bite.
If you haven’t had fennel before: It’s very much like celery, but with a distinct anise (licorice) flavor–it’s zesty and fresh and goes great with sausage or in salads, especially salads that include a sharp cheese and possibly also apples.
I only have two pictures of this one because I was so focused on getting it together so I could devour it! But two pictures should be all you need to convince you to make this, because it’s amazing.
Even if you think you hate kale, give these a try. They might surprise you.
This recipe is the epitome of summer for me. If I don’t make this, my summer is not complete. I wait for it all year the same way I wait for toasted pumpkin seeds in the fall. However, it is really spicy (real talk).
This recipe has become my new go-to summer salad. I have been raving it about it to everyone I know. They probably want me to shut up.
