Empanadas are your basic stuffed savory pastry, originating in Spain and being popular throughout Latin America. They are the Spanish version of pasty or the salvadoreño pupusa and are very easy to make (if a little time intensive).
Bonus: They come in the colors of the Italian flag!
If you haven’t had fennel before: It’s very much like celery, but with a distinct anise (licorice) flavor–it’s zesty and fresh and goes great with sausage or in salads, especially salads that include a sharp cheese and possibly also apples.

So easy to make on Sunday night, eat for dinner and eat throughout the week. Cut it into however many slices you like for convenient portioning.
I had nothing I needed to make risotto, but darn it, I was determined to have risotto. I pulled out whatever I had that would work. I was determined not to go to the store and to use up my stuff that was going bad.
